Egusi Soup (MELON) RECIPE


Egusi soup, also called melon soup is an absolute delightful delicacy enjoyed all over West Africa, especially amongst Nigerians anywhere they live.

It is arguably the most popular Nigerian soup, especially in the Southern part of that country.

INGREDIENTS:
Melon, meat, pepper, onions, seasoning, pumpkin, crayfish, palm oil and stock fish.

METHOD:
Use a pot to hit the oil, clean the stock fish and boil in another pot with onions till soft add the meat to it and allow it boil for 30 minutes. Then add onions, pepper, seasoning, grinded melon, and crayfish to the heated oil and allow steaming for 1 minute.

Pour in the cooked ingredients into the fried ones and allow boiling for 10 minutes. Add pumpkin and salt to taste and allow simmer for 5 minutes.
